A True Culinary Experience

Come and spend a morning with us in the kitchen on a beautiful 18th century, 2,500 acre estate and learn the secrets of real Tuscan cuisine. Food is such an integral part of the Tuscan lifestyle. Our chef, fluent in English and classically trained, has great patience and a real passion not only for the food but all that goes with his culture. He uses only the best and freshest of the season’s produce; our very own extra virgin olive oil and freshly picked herbs from the garden. He’ll explain not just the methods but the story behind each dish.

Classes are small, intimate & informal, maximum 6 people, and are totally hands on.

You will be given your own recipe to follow from the day’s menu which include delicious antipasti, various types of pasta, a main course and a dessert, all of which you will prepare under his watchful eye, culminating in a late lunch or early supper to taste, critique and appreciate the fruits of the day’s labours, naturally complimented by local wines.

Of course no class would be complete without learning the basics so we start with an antipasto of

Various crostini including ‘ Crostoncini di Fegatini’ traditional Liver pate

on toasted bread

We will make pasta altogether and make two different dishes

Raviolo aperto agli spinaci novelli - Open Raviolo with spinach

&

Pappardelle al cinghiale - Ribbon pasta with wild boar sauce

Followed by

Lombetto di vitella in manto di verza e pomodoro ai pistacchi - Veal wrapped in savoy cabbage with tomatoes and pistachio nuts

And using the local chianti wine a wonderful dessert ‘Delizia al profumo di cannella con pere al Chianti’

Pears in ‘Chianti’ spiced with cinnamon mousse



Price: 130,00 Euro per person, classes should be confirmed 1 month in advance.

Minimum 2 people; Includes recipes, all ingredients and materials, lunch or supper with wine.

(35 Euro for non participating partners who would like to share lunch or supper).
